Chocolate Chia Pudding – YUM

I have been sitting on the sidelines for a while when it comes to chia seed pudding. It intrigued me into action today though for some reason and now I am hooked. Beside the incredible health benefits – protein, omega 3, iron, calcium etc it was DELICIOUS.
CHOCOLATE CHIA SEED PUDDING
2 servings
Ingredients:
1/4 cup chia seeds
1 cup vanilla soy, almond or rice milk
1 banana, mashed
1 TBSP almond butter
1 1/2 tsp cocoa or raw cocoa powder
Mash the banana and set aside. Combine the chia seed, plant-based milk, almond butter and cocoa and whisk together until well blended by hand. Add the mashed banana and stir in. Allow the mixture to sit for 10 minutes, stir again and then allow to sit for another 10 minutes and then enjoy for breakfast or as a dessert. It’s delicious, nutritious and filling, the way all good food should be.
