Interviewing Auntie Loo
January 3, 2012

One of my favourite things about living in Ottawa is knowing I can get amazing vegan baked goods from Auntie Loos’ Treats. I LOVE their amazing cupcakes more than I would like to admit. When determining who to interview for my expert interview series for my upcoming 30 Day Health Tune Up Mandi Lunan the owner/genius behind these fantastic sweets was at the top of my list. I met with her last week and I picked her brain on how she veganized her grandmother’s treats.
Mandi is one of the most down to earth and authentic business people I know and so much fun to spend time with. One of the things she was really clear about is that Earth Balance is an amazing butter substitute and the best high quality vegan margarine out there. She warned people to use this product instead of cheaper brands if they want great results. When it comes to replacing milk in recipes it is easy, soy, rice and almond mild all work really well. She also mentioned vegetable puree as a key to her baking when substituting eggs. I have used apple sauce myself for muffins but the Nutritionist in me got really excited when she started talking about using vegetables like beets in their pureed form to replace eggs. This is a win-win as far as I am concerned. So long cholesterol and salmonella, hello nourishing whole vegetables. The amazing part is the end product is always so divine you would never even know it was good for you.
Mandi’s formula is to use 1 TBSP of vegetable puree and 3 TBSP of water for each egg you want to replace.
Happy Vegan Baking!
PS: There are still a few spots left in the 30 Day Health Tune Up program and it is going to be a tonne of fun. Email me if you would like to chat about one of those spots.
eBook and New Program on the Horizon
December 18, 2011
By Deb Gleason
It is a pretty exciting time for me, I just finished writing my first eBook called Transitioning to Vegan and I am three weeks away from my first 30 Day Health Tune Up program in Ottawa. Wellness Warrior Coaching is coming to life and I could not be happier. Putting the book together was a long and interesting process and I am really happy to turn it over to my partner who is busy taking the text and designing it into something beautiful. I will finally publish some of the recipes I have been creating over the last 10 years which is big for me. For a long time I thought I would publish a cookbook but that has morphed into an informative book with recipes that support the ideas.
I look forward to sharing the book with you when it is designed and ready for release. The book will make up part of the materials I use in my 30 Day Health Tune Up program in January. I know the book will be a great guide for those taking the program.
Here is a small excerpt from my book Transitioning to Vegan
“Every year North Americans eat an average of 1,000 pounds of food. What does your 1,000 pounds look like? The 1,000 pounds you choose for the next year will significantly impact the way your body looks, feels and functions. It will also impact all of the living systems around you in countless ways. Every meal you eat without animal products is a positive change you’ve made in the world, starting with your internal world. Choose to create your own abundant health and in the process a joyful, peaceful world”.
Thank you for your ongoing support and get ready for some great stuff coming out of Wellness Warrior Coaching very soon.
